One of the neat things about The Village is that our cooks maintain their own fresh herb garden just steps from the kitchen. This recipe is the quintessential summer treat. Simple, colorful, fresh, fragrant, and easy to make.
• 1 pound fresh buffalo mozzarella, sliced
• grilled Bermuda onion slices
• large bunch of fresh basil
• fresh baguette, sliced
• good quality olive oil
• good quality balsamic vinegar
• ripe fresh tomato slices
Arrange toasted or grilled baguette slices onto a platter or pretty cutting board. Smear with a generous amount of pesto. Layer with mozzarella, onion, and tomato. Garnish with a basil leaf and drizzle lightly with olive oil and balsamic vinegar.
